Director of Restaurants and Bars
A passion for the fast paced, energetic life of a food & beverage professional in the ever-changing hospitality industry, our Director of Restaurants & Bars, Ryan Brewster, brings over 15 years of experience to The Watermark Hotel.
A graduate of Syracuse University, Ryan started his career in San Francisco where he jumped right into the mix of F&B at Scala’s Bistro & Nightclub, Harry Denton’s Starlight Room. He then started at Kimpton, where he'd spend 13 years honing in on larger-scale operations. Ryan ran NIOS, a theater district bar and restaurant in NYC's Times Square, and he later took on the role of GM of F&B at the Palomar Hotel in Washington, DC. In 2021, Ryan joined USHG, and it was Ryan's expertise in leading the reopening and operations of two venues at the Thompson Hotel on Capitol Hill that caught our eye!
In his free time, this Northern Jersey native enjoys spending time at the Jersey Shore with his fiancé, Lisa, and 4-legged bestie, Chewy, or you may find him cruising the slopes by way of his snowboard in the Adirondacks.
While his previous work with Wren’s Chef Yo may have something to do with him joining our team, this self-proclaimed mini golf champ may have chosen us because of the soon-to-open Perch Putt. We’re going to assume it was both.
